Award-Winning Double Chocolate Mocha Cupcakes

1-1/2 cups all-purpose flour

1 cup sugar

1/3 cup baking cocoa

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1/2 cup cold brewed coffee

1/2 cup vegetable oil

3 teaspoons cider vinegar

3 teaspoons vanilla extract

MOCHA FROSTING:

3 tablespoons milk chocolate chips

3 tablespoons semisweet chocolate chips

1/3 cup butter, softened

2 cups confectioners' sugar

1 to 2 tablespoons brewed coffee

1/2 cup chocolate sprinkles

In a small mixing bowl, combine the flour, sugar, cocoa, baking soda and salt. In a small bowl, whisk the eggs, coffee, oil, vinegar and vanilla. Add to dry ingredients; mix well.
Fill paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.
For frosting, in a small microwave-safe mixing bowl, melt chips; stir until smooth. Add butter; beat until blended. Gradually beat in confectioners' sugar and coffee. Pipe frosting onto cupcakes. Top with sprinkles; gently press down. Yield: 1 dozen.

My husband has asked for these ever since I made them. They are so good. Camden LOVES helping make them. NOT diet food... but comfort food.

Daily Posting A Goal?

Daily posting is now a goal, not a habit.
I almost fell down on day 2 of my goal, because I'm suffering from computer overload. I had to do four weeks of lesson plans today -- and I teach four preps. If you know anything about teaching, you know that is a lot!! ...and my lesson plans are so in-depth. Yes. People say I'm a little over-the-top, but I just like to get it right. The. First. Time.

Now, I'm not wanting to write much because I need to go make my CMP ATC for this month. ...AND finish my package for my ATC partner. ...AND listen to this week's CMP, (which I thought was loaded on my iPod when I got in the car at 6.30am, but it was not, I somehow ERASED my entire iPod. Go figure.) So, I've got it re-loaded and I'm ready to go... and do something FUN. Anything! FUN!

It's been awhile...

and now I'm humming that song in my head.

But it really has been awhile. I've posted here and there but nothing really meaty. (That sound really gross, but you get the gist.)

Where have I been? Oh, just working. And working. And working. And working.

You see, our school has this curse-- we cannot hold on to an administrator. The turnover rate on our administrators is AMAZING... and of course, each time a new administrator comes in, so do a new set of rules and strategies, and new visions! I've always been a stickler for everything, so I'm pretty on top of my game and organized... so the new principal hasn't hit me as hard as it has hit others. Last year, I left at a 'reasonable' time each day and my car was maybe the fifth car left in the parking lot, counting the custodians. This year, I am leaving -- still at a 'reasonable' time (two hours after school gets out)-- and the parking lot is still FULL. I love it! People are actually doing what they are supposed to! Awesome!

I've been teaching "showing" writing. (Show, don't tell)... and I wonder about my own writing and my blogging and how blogging is like journaling and where the creative portion comes in. Sometimes I'm lucky just to get something typed up. However, I DO need to practice what I preach.

I've suprisingly kept up with my laundry and my house is spic and span, because I've been doing a little bit so that I don't overwhelm myself. I've also been cooking each night.

But-- my creative time has suffered. I drew during the sketch crawl, but that's really all that I have produced so far. I have planned my CMP Journey ATC but haven't started it yet, and I'm getting down to crunch time. It's on my list of things to do tomorrow. And I should have done it already. But August snuck up on me. BUT IT WILL GET DONE TOMORROW. That's one thing I've promised myself. To stay in the loop with the CMP group and the ATC exchanges. If I do nothing else, I WILL do that card -- I DO have time for a card a month.

Well that's about it for now. To everyone out there, I've been reading your blogs, just haven't had time to comment... but I do have time to peek in while reading email in the morning. (Which I heard was the biggest no-no of them all.)

FINALLY... A day with a focus on drawing.
I did three sketches, one mid-morning, one in the afternoon and one in the evening.
It was nice to get back to sketching. I re-arranged some furniture in the living room so that I now have a small table next to my chair... to hold coffee, sketchbook, journal and pens. So, maybe, just maybe, I can make more time for that. I do sit in that chair a lot. While C is watching SPROUT-- and after Looooong days at work lately. So, I'm TRYING!! We will see what comes of it.

Yes, this is about how I feel today. I'm tired. Joe and Camden went out of town to take Uncle Dan (Joe's brother) back home... and they are going to spend the weekend with him. It was implied that I come along, too, but I decided to request to stay back, to stay home. (I haven't been home alone since Camden was born!... I've been "away" alone, but not HOME alone.) And.. it's dangerous. I'm tired, because I've been cleaning out closets. My bedroom closet is SO ORGANIZED... even by color shoe and by designer handbag. Yes. I could be doing something else with my time, but I've always wanted a nice, neat organized closet, so that's what I did today. All day.

Then, I went to Blockbuster, and to Publix for some goodies. I just watched Because I Said So with Diane Keaton and Mandy Moore. I LOVED THAT MOVIE!!! Being one of three girls, I could totally relate and yes, we do have the helicopter mother, too. (Although she tends to hover over the middle child more-so than me and the Peanut.) ...anyway... yeah.

I'm having fun. Although I do miss my boys!!!

Cottage Style

Had to go to school today. Got a call, important stuff had to be done. I said I would come in Tuesday, and as I sat there, decided to go ahead and get it over with so I could enjoy the rest of my week off... (read: clean, organize, get ready for the school year!) ---- So, I went to school. I got said projects done and delegated the administrative work. Had lunch with my hubby, and then.... went shopping! I had to go to Macy's and Dillards to hunt for the best deal on my husband's cologne, and while I was out, I found the most beautiful quilt and sham set, and new sheets! We really needed new sheets. These are 500 thread count and soooooooo comfy. I washed them as SOON as I got home! The quilt sort of brings together my 'cottage' look that I'm going for in our bedroom. We already had these shabby chic pillows and the matching bedspread. The bedspread is now folded at the bottom of the bed. Looks great to me.

Then, I showed Joe. He said "it doesn't match". I was like THAT'S THE POINT. He said he didn't really like it. Then I cried. Because I love it.

Then I took out my 'cottage style' magazine and SHOWED him photos of cottage style. He said 'well, I come from the old-school look... you know, blue bed, blue pillows, blue sheets. blue. blah. whatever. He doesn't REALLY care, but I always take his opinion into account because this IS his room. Although, after my sister painted her room pink, I WANTED a pink room. I would go over to her house and just sit on her bed, looking longingly at the walls and sighing. She thought I was crazy, but I LOVE her pink room. We're going to do a greenish-blueish I think. Still. Not. Sure.

Tomorrow, I will clean. I will rearrange the bedroom. I will do laundry. I will (hopefully) podcast. ...and tonight, I'm going to sleep all cozy in my cottage bed and if Joe does not like it, there's a twin-bed down stairs with sock monkey sheets and a baseball quilt that he's welcome to.

Kitchen Talk

Isn't this so pretty? I saw it in a magazine. Home Companion, I think. I really want to make aprons. I've seen so many cool patterns lately. I have one vintage apron that I wear sometimes. Love it. Hubby loves it too--because if I have it on, that means I'm making something elaborate. However, this apron reminds me of my mom. Her kitchen is decorated in strawberries. She likes strawberries (obviously), and so went with that theme. Then, of course everyone bought her strawberry stuff, and she's now overloaded... LOL! (sort of like the coffee theme took over my kitchen!)...

I'm in the process of phasing out the coffee theme in my kitchen. Keeping the green, put downplaying the novelty elements. Moving all of those to one wall and focusing more on color. I made some excellent curtains last weekend, and then I hung my French Toast Girl print in the kitchen, too. So, this forced me to make a decision as to what I should do with the coffee elements. I've decided to devote one wall to those. But first, we must get rid of a hideous fish tank that we have. Anyone want fish? We have good ones, that refuse to die! LOL! :)

Ok, my little one is at the bottom of the stairs calling "MAMAMA", (probably cause his daddy told him to)... so I guess that's my cue to be DONE!

Date Nights Become Date Days

...so date "nights" are not a reality when my sisters are out of town. Because, quite frankly, we don't trust anyone other than family to keep our little bundle of joy (or) the rugrat (pet name depending on the day)... So, today, we had a date "day".

Joe got off work early -- I picked him up at noon...and this is what we did!
*Ate at Chilis-- he a burger, me a fajita pita (or a pajita fita, as he so hilariously ordered for me when I forgot what I had said I wanted.)
*Went shopping -because the new shoes I chose to wear were hurting SO bad-- me, being a reef and croc girl, regular shoes feel like torture chambers.
*Went to see The Bourne Ultimatum -- (yes, it was outstanding.)
*Went together to pick up our little one... then back to get the other car, then home.
*Joe fed Camden.
*I made coffee.
*We played w/ Camden.
*Then, put on our favorite PJs, put Camden to bed, and, the rest, history! (I am pictured above in the most comfy set of TH pj's in the WORLD. I have them in pink too. I love them.)

Celebrations: Joe got a new "position" at work and will now be working in an utmost-important building. We are excited.

I'm re-reading The Nanny Diaries. I saw it at Publix yesterday and scooped it up. I read it awhile back when it first came out, around the time that I WAS a Nanny... LOL! (Oh, how much I thought I knew then about raising children. I was way cocky, I thought I was perfect, and that I knew everything.) WRONG!!!!!!! (Mothering is harder than young people think!) HOWEVER, The Nanny Diaries is a good read.

Up to?

What have I been up to? Whether you care or not, I need to write it down, to clear the brain, and make myself feel better. Summer is coming to a close and I'm feeling stressed, I hear the "mission impossible" tune playing in my mind as I try to (quickly) wrap up projects and get things done before my life becomes even more hectic with an ACTUAL JOB thrown in the mix!

So, today, a list-- in no particular order:

*At school yesterday, getting a head start on plans for the year.
*Preparing fabrics for a special project for my team of teacher friends this year.
*Cleaning my house... yes, that's what I'm doing today. Not fun, but I DO have podcasts to listen to... so there's a yay in with that boo.
*Going on "the great hunt" for library books around the house that were due YESTERDAY! (Yes, we missed our library day this past week. Why? I can't remember. But. It was a good reason, I'm sure.)
*Conquering Mt. Laundry. (Yes, my load-a-day fell to the wayside this week, and my boys go through laundry like they go through food: quick and furiously.)
*At school tomorrow with lots on the brain.
*Movie tomorrow afternoon with Joe (the only time we GET to watch movies, because of the rugrat we live with.) LOL!
*Pondering a book-cover scheme for someone special.
Yes. That's not all, but I'm running out of memory.
And I do have a list (or two) around here.
